One of Australia’s most extraordinary native fruits, the Finger Lime (Citrus australasica) evolved in the subtropical rainforests of eastern Australia. Hidden beneath its slender, almost unassuming skin is something completely unexpected, hundreds of tiny translucent citrus pearls.

Often called “citrus caviar,” each pearl bursts individually in the mouth, releasing an intense flash of lime. Depending on the variety, the pearls can glow pale green, yellow, pink or deep ruby, giving the fruit an almost jewel-like appearance.

Its flavour is unmistakably citrus, but more complex than an ordinary lime, bright acidity, grapefruit-like bitterness, floral notes and a clean, refreshing finish. Rather than releasing all of its juice at once, Finger Lime delivers it pearl by pearl, creating tiny explosions of flavour across the tongue.
